“NUT &
SEED CAKES
In Europe, there is a great enthusiasm for cakes
filled with nuts and seeds. Such cakes need little
enrichment; eggs and sugar are sufficient. Flour is
hardly ever added and butter is often omitted as
nuts and seeds have natural oils that impart a fine
moist texture, and it is the separated egg white
whipped into stiff foam that lighten and give the
mixture air. These cakes tend not to rise much but
their flavor is strong, pure, and very unique.
