NUT & SEED CAKES
In Europe, there is a great enthusiasm for cakes filled with nuts and seeds. Such cakes need little enrichment; eggs and sugar are sufficient. Flour is hardly ever added and butter is often omitted as nuts and seeds have natural oils that impart a fine moist texture, and it is the separated egg white whipped into stiff foam that lighten and give the mixture air.
